1. Put peppers and onions through food processor
2. Place in large saucepan
3. Add salt and cover pepper and onions with boiling water
4. Let stand 10-15 minutes
5. Drain and discard liquid
6. Add vinegar and sugar
7. Bring to low boil, turn heat down and simmer for 20 minutes.
8. Can be used immediately or canned by using a boiling water bath- can for 15 minutes after water starts to boil.
Makes about 7 pint jars of relish.

Howdy Ben,
Owen amd Monica Miller from Hogz-N-Dogz Checking in. We Picked up one of your Big Dog Carts a few weeks back and just had our first weekend out with it . This being our first weekend out we kept an open mind and realize there is always room for improvement and that one must crawl before they can run . All in all we had a good first outing. We know that foot traffic is the key to increased sales but took a chance on a location with no foot traffic (It being a free location didn't hurt either). We figured if the day was slower paced then that would give us plenty of time to get to know the ins and outs of the cart. We set up at the base of a popular stretch of road that is known for 318 curves in 11 miles . You being in Sevierville should know where I'm talking about… There were 3 seperate events going on at the end of the road and we set up at a well known turn arround spot at the other end.
Saturday was a great day for sales and the weather. The day started out slow but picked up. Sundaywas not as good as Saturday but all said and done we made a profit. Being new to the game I think we over prepared and our expectations were probably set a little higher than they should have been. We now know to not worry about having enough supplies/product for the day. When you sell out your done. As I have heard you say before oh.. I sold out that's terrible..lol. We are looking forward to hitting it again next weekend and also nailing down some weekday locations with some foot traffic (we have more than a few leads. I have attached a few Pictures of our set up please feel free to comment . We are open to any critique . The Big dog cart performed grat and got a lot of compliments. Thanks for all your help…
