I was in a rush…
I'd just received my “D” ring floor fasteners from Amazon and I had 1 hour to get them installed and get the PIG ROASTER PRO® loaded and my butt on the road.
I was in a hurry.
So I used wood screws…
Can you say…. “STUUUUUUPIIIID”?
Well I put four tie down fasteners on the floor with wood screws. Should have bolted them in, but heck, I was in a huge hurry.
11 hours later, I'm in Tennessee and through the ups and down and winding twists and turns of the road through the mountains at 70 miles per hour… The Pig Roaster Pro stayed perfectly in place. It wasn't until I was leaving TN to head back over the mountains when I heard a big Currrrrr…Thuuuuudd.
I pulled over and opened the side door to the trailer and there laid my roaster on its side.
The black roaster cover was on it so I couldn't tell if I'd broken the glass in the cover.
With super human HeMan, Wonder Woman strength, I alone turned that roaster back up-right.
Took off the cover to find the glass still intact.
Hallelujah!!!
My wood screws had pulled out of the floor and so I had to realign them and create new holes. This time I set some coolers up beside the roaster to at least break its fall if the screws gave way again.
I made it home!
No more flip'n the pig roaster.
So because of my irresponsibleness I figured I'd go ahead and get some insurance today. Got me the Roasting Nomad Tribe discount which is the lowest price anyone in the world can get insurance for. $2 Million coverage! For less than $25/mo. 🙂
I procrastinated and still don't have my resale tax id, but I swear I'm getting that today.
My two sexy meat cleavers came in… I'll use these to fine chop up pork for easier sandwich eating.
I learnt more!
1. The lower and slower the pig is cooked the less
likely you'll have a disappearing middle.
2. Have help when prepping a large pig (protect your
back)
3. 40 – 60 lb approx 3 hours
60 – 70lb approx 4 hours
80 – 90lb approx 5 hours
100 – 150lb approx 6 to 8 hours
**400 is optimal temp for any size**
You can cook lower and slower but it means you must set up earlier at your location.
4. Spine clamps should be about 7-8″ apart

P.S. Trying to get everything ready for this Saturday's pig gig at the Yacht club… I'll let ya know.
