Lumpy Cheese Sauce?

Howdy, folks! Recently, I answered a question from a hot dog vendor about the best way to keep cheese sauce smooth and creamy.

He wanted to use it for chili-cheese dogs and nachos. It's true that cheese sauce can be tricky to keep perfectly smooth and creamy, but I have some tips that will help!

And since sauce is such a popular add-on for hot dog carts and catering menus, I'm going to share those here!

The main problem with cheese sauce is after a while of being kept at the proper serving temperature, it can get thick and/or a bit lumpy. As some of the moisture from the sauce evaporates, it naturally gets thicker, which can make it harder to serve, and maybe doesn't look as nice. You want a delicious cheese sauce that is easy to pour and flows nicely over the dog or chips or whatever you're using it for.

Sauce Options

To keep the sauce at the perfect consistency, you need to add back some liquid. There are options for this. Of course, you can use water, but that will dilute the flavor. You could also use milk or cream, which work well for the texture, but still may give you a bland sauce.

Options:

• Water
• Milk
• Cream
• BROTH!

What I like to do is use broth. Try chicken, beef, or vegetable broth. These are great for keeping the sauce smooth, and they also add flavor, instead of diluting the taste. Your customers will love it! The sauce will be smooth and delicious.
