A Word About Hot Dog Buns

I got a question about warming buns on a hot dog cart, and whether to pre-wrap hot dogs for service. My opinion is it's always better to serve a fresh hot dog on a freshly-steamed bun. But in certain situations, it's okay to pre-wrap some hot dogs. Just don't do it too far in advance. And if you can, serving them fresh is always better.
