Why are so many food truckers afraid of doing breakfast when they are at an event? Why, if you have the opportunity serve a food truck breakfast prior to your event, wouldn't you take advantage of it? Why would you not offer a breakfast catering menu? Breakfast is an easy money maker, and an easy service. If I can do breakfast and then swap over to lunch, I'm all about it!
Food Truck Breakfast Menu Ideas
Waffle Tacos are an easy one to make and plate. We make the waffles ahead of time and hold them on the steam table. We cook ahead-of-time bacon, sausage patties and pork roll. We use a shredded tri-blend of cheese for topping the egg. We will make the eggs in the flat top and fold them over and place in a pan on the steam table. When a waffle taco is ordered we pull a waffle, place the meat and egg on it, sprinkle on the cheese, and place it on the flat top griddle with a dome for a minute.
When the cheese is melted, we fold and place the finished waffle into a to-go container or a #3 boat. We offer sides like maple syrup, salsa, sour cream, and jellies. You can do the eggs as a western omelette for a second waffle taco with the same proteins you have for the first breakfast taco.
Breakfast Bowls are another easy one to make and plate in the truck. We take a #3 boat and add home fries or sweet potato (with caramelized onions and brown sugar) home fries, add an egg or two, meat of choice, cheese, salsa, black beans, sour cream, etc.
People love “bowl” anything, and you can get creative with the ingredients.
Traditional Breakfast Sandwiches are always popular. We do these on a medium kaiser roll with the same proteins we used on the tacos. We do the eggs on the flat top and fold two slices of cheese into the egg as we fold it and place it in the steam table. When ordered, we place the egg and protein of choice on the roll and out the window it goes! These egg, meat, and cheese breakfast sandwiches are quick and easy.
Biscuits and Sausage Gravy is another classic breakfast menu item. It's an easy one to make and serve. You can buy pre-made heat and serve biscuits that are awesome. You can even buy the sausage gravy pre-made. We cut the biscuits in half and place them in the boat, ladle the gravy over the biscuit bottoms, and then place the biscuit tops on slightly askew to show the gravy.
Breakfast Burritos are another food truck breakfast item that are easy and cheap to make. You can use all the same ingredients we just spoke about above with the addition of a 10-12″ flour tortilla shell. We offer plain egg and a western omelet and then the meat protein, salsa, sour cream, black bean and rice if you want. We roll and wrap in foil and cut in half and serve in a #3 boat.
Food Truck Breakfast Side Items
Home Fries are an easy side. We dice and par-boil the potatoes, then finish them on the flat top griddle with butter and seasoned salt. We serve them in a #1 boat.
Sweet Potato, Caramelized Onions, Brown Sugar. These are a great breakfast item that can be converted to a lunch item. We add black beans and serve it as a vegetarian taco.
Fruit Cups or Yogurt Parfait These can be as simple as a mixed fruit salad in a solo cup with a lid and a fork handle dropped through the straw slot. You can add vanilla yogurt and granola in layers with the fruit and up charge for it.
See, there is no reason to be afraid of breakfast…after all, it is the most important meal of the day!
