Well, howdy, howdy, howdy! I’m glad to be here, and I hope you are too.
Today, we’re talking buns — and not the kind you see at the beach.
I get this question a lot from new vendors and seasoned pros alike: “Ben, what kind of buns should I be using for my hot dogs?”
Truth is, just like buttholes, everybody’s got an opinion.
And mine?
Well, it’s been tested in the trenches of street food vending.
Soft Buns vs. Dense Buns
If you’re gonna load that dog down with a mountain of juicy condiments — chili, kraut, onions, sauces — you need something that won’t turn into a soggy paper towel halfway through the first bite.
That’s where a bakery pan loaf (sometimes called a pan bun) shines. It’s denser, holds moisture better, and won’t fall apart under a condiment landslide.
But… if you’re going lighter on toppings, or even serving a chili dog with less sloppy juice, softer buns win every time.
I’m talking soft brioche-style buns — the kind most hot dog vendors in America serve.
Steam them, and now you’re playing in the big leagues.

Why I Prefer Softer Buns
Personally, I’m a soft bun guy.
A thick, dense bun can mess up your bread-to-meat ratio real quick.
Suddenly, you’re chewing through bread for days just to find the dog.
That’s not what customers come for.
They want the good stuff — the meat, the flavor — and the bun is just the delivery device.
When Dense Buns Make Sense
Dense buns do have their place.
If you’re slinging quarter-pounders with mountains of toppings, those bakery buns can save you from messy customer complaints.
I’ve got friends who are super successful using them.
I just personally don’t love them for my own menu.
Vendor Tip: Test Both
Don’t take my word for it.
Steam a soft bun, then try a bakery-style pan loaf.
See what works best for your menu, your style, and your customers.
Your local bakery — even a grocery store bakery — can usually make you custom pan loaves.
My buddy Michael Wood of Doug’s Dogs gets his from a local bakery, and they’re the perfect balance: pan loaf structure with brioche softness.
Final Word on Hot Dogs Buns
At the end of the day, the bun should get out of the way and let your hot dog shine.
