Some hot dog cart manufacturers use the wrong type steam tables for carts. What if your steam table is wrong?
DIRECT HEAT STEAM TABLE
The easiest way to know if you have a direct heat steam table is if you can put a pan inside it and boil water like you could if it was over your gas stove.
INDIRECT HEAT STEAM TABLE
You'll know by the fact you won't be able to boil water and really could of just gotten a simple Bain-Marie instead.
WHY WOULD THEY USE AN INDIRECT?
Indirect tables are great if you've already heated the product and now just wish to keep it warm. Unfortunately, this isn't a great system for hot dog vending where you are constantly boiling up or rapid steaming new batches of hot dogs and sausages.
Manufacturers who don't make their own often buy one that has indirect heating. It's proof they've never vended a day in their lives. Most manufacturers use the direct heat method (because it's smart).
STEAM TABLES AND PANS
No worries, in the video below – I share how to fix the problem and even how to avoid it all together.
And to avoid the confusion that comes with understanding all the pans:
– Spillage pans
– False Bottom pans
– Perforated pans
– and all their sizes and uses – please see this: Steam Pan Video From Cart
